Half a day course. Good experience. Knowledgeable and pleasant chef. Nice kitchen and atmosphere.

Areas for improvement:
- recipes printed on half A4 sheet. No space to take notes and instructions are rather brief. Chef didn’t quite follow all the instructions himself.

- demonstration area is too small and you can’t see what’s happening in the saucepan from where you sit. Given we only get to prepare one meal, I’d expect to be able to see everything.

- a lot of emphasis is made on good quality ingredients and extracting flavour, but I’m yet to find out whether it’s possible to achieve similar taste with cheaper ingredients.

Perfect experience with the RB team. I was overwhelmed to receive by a lovely friend this gift to go to the RB cookery school, as a thank you for cooking a dinner party. I’m a competent cook I like to think, with my best dishes focused around French fine dining. However after my cookery tuition with the Le Manior team I am so excited to push my cooking further now.
Dishes were well thought out and tuition and my fellow students just delightful.
I will return, particular nod to the salmon dish and sauce.
Time very well spent, thank you.

The place was amazing, all staff from the minute I arrived were amazing and the cooking course was amazing too. Thank you to all running these informative and friendly courses. A visit from RB and his subsequent demand for salmon was a great insight into how his chefs love him. I will definitely try all the dishes at home and look forward to returning to try the restaurant tasting menu and an overnight stay soon.

From arriving at the beautiful grounds of Le Manoir until the goodbyes the day was just wonderful. I attended the Maman Blanc Course a couple of days ago as a novice cook and this course has infused me with confidence to try and cook things that I would never had ever attempted.

I was fortunate to be in a group of 8 interesting and sociable people which in itself made the day enjoyable. We were so fortunate to be taught by Michael, the head tutor, who was brilliant. His demonstrations of the various courses were first class, made all the more enjoyable by the endless information and stories about the hotel, Raymond Blanc, his personal experiences and some wonderful funny stories. We were instructed and entertained. The cooking practical's were fun and, of course, we got to eat the fruits of our labour.

Michael gave us a tour of the grounds, which was quite illuminating both with the variety of items grown and the size of the estate.

An experience which has sparked me into trying some more adventurous cooking. Thank you.

Fantastic Experience

Michael John was an amazing and passionate individual. No question was left unanswered. We watched, copied and sat down to eat 5 separate dishes from poaching an egg to perfection, to making a pistou soup with fresh basil, crispy fried salmon in white wine sauce followed by sirloin steak in a red wine jus. Rounded off with îles flottantes. A perfect finish to a perfect day

The “Simply Raymond” course was very enjoyable. The tutor was cheerful, enthusiastic and a dedicated chef keen to pass on his knowledge, We cooked baked cheese with flat breads, pistou soup and cod cassoulet. Other dishes such as floating islands, morteau sausage salad and a fruit crumble were demonstrated.

I realise that it must be difficult to choose items to cook in the cookery school. I also see from other reviews that some people would like to cook more but I found the demonstrations, the ideas & the tips given by the chef more valuable.

In some cases, the recipes given on the day do not match up with the recipe book & also the chef did suggest changing some of the quantities in some recipes. This leads to some confusion especially when you get home and try to decipher your notes! It would be better to either give photocopies of the relevant recipe pages or give the book. Also although the chefs apron is a lovely memento of the day, a Raymond Blanc apron would be more practical & useful.

Mark the school director is an excellent tutor and chef. I took a half day class given to me as a gift and thoroughly enjoyed the whole experience. The information was interesting, the food simple and easy to prepare to a high standard. I think for such a short course we were given a lot of useful home cooking information and I would love to go on a longer course. The kitchen is small enough to feel homely and you are not surrounded with unfamiliar gadgets that you don't already have in your own kitchen. Everyone on the course was there to learn a little and Mark made that fun as well.

Absolutely fantastic! What a day!! I was bought a days cooking course by my husband for Christmas. I have to say I was a little apprehensive beforehand, but certainly shouldn’t have been. From arriving to leaving, every member of staff we encountered was pleasant, efficient and couldn’t do enough for you!
Mikey, was our Tutor for the day and he was brilliant. He put us all at ease immediately, he was very knowledgable and a brilliant chef!
I chose the Maman Blanc course which was fantastic! We even had an appearance from Raymond Blanc himself. Just as warm, passionate and enthusiastic as you see him on TV.
A visit to the gardens is also a must!

This was the best cooking class I have ever attended, Mark Peregrine, the school director, was using on first name terms from the start, everything we needed was provided and his main point was to get as much flavour from our food as possible.

Tonight I am going to try and adapt his salmon recipe using what produce I can get, and lets hope it works

While I was cooking my wife was soaking up the atmosphere of Le Manior and it's magnificent gardens.

The whole "Manoir" experience was great. Mark Peregrine is an excellent educator and has a great sense of humour as well. We started at 9 a.m. and finished up at 5: I don't think my feet touched the ground for hours afterwards! I learned more than I expected, having been a cook for more years than I'd like to say. I can't wait to do it again. (Mark, be warned!!)
